Vegan Roasted Red Pepper Pesto

Let's talk VEGETARIANISM!

A couple of months ago, I discovered (through a detox) that eggs and me are not friends in the morning. I wanted to be friends with eggs -- I've had a long love affair with eggs -- but I quickly realized that it was an abusive relationship and it had to end.

My mornings became vegetarian.

Then I started implementing ONE VEGAN DAY a week here at Groff Nation. It was my little way of saving some cash, helping out our planet, saving some animals, and being kinder to my digestive system.

And then a couple of weeks ago, I went #lactovegetarian for a whole week, completely by accident. This is when I discovered that me and meat are not friends, either.

I felt lighter. I felt more energetic. My skin looked better, I was sleeping better, my workouts were going more smoothly.

The weight that I was retaining from my bout of #adrenalfatigue started to melt off. MELT. OFF.

So my venture into vegetarianism has begun. Again.

This time, I am more conscious of how the foods that I am fueling my body with are making me feel. I am more intentional about what goes into my mouth, and even at what time. Since I am almost done with my masters degree in nutrition, I now know HOW to transition (some of you may remember how my hair fell out in clumps when I went vegan 12 years ago).

There are so many great vegan and vegetarian options for the foods that we love. Take this, for example. VEGAN ROASTED RED PEPPER PESTO. OMG it was so YUM. And even HERSHEY liked it, which is saying a lot because he is a CHEESE LOVER. It was that good.

VEGAN ROASTED RED PEPPER PESTO

This is a smooth and creamy vegan option for those chilly winter pasta nights.

Prep time:

Ingredients:
  • 1 16 oz. Jar Roasted Red Peppers
  • 1/4 cup fresh basil leaves
  • 2 peeled garlic cloves
  • 1/2 cup Organic Nutritional Yeast
  • 1/2 cup hemp seeds
  • 1/4 cup olive oil
  • 1/4 - 1/2 tsp salt
  • cooked spaghetti squash or zoodles

Instructions:
  1. Add all of your pesto ingredients into a food processor or high speed blender. Blend until smooth.
  2. Pour pesto on top of cooked spaghetti squash and mix to combine.
